Ingredients:
1 Tbsp Sesame Oil
1/2 Cup Diced Carrots
1/2 Cup Edamame
1/2 Cup Diced Zucchini
6 Eggs, Divided
2 Cups Cooked Brown Rice
2 Tbsp Rice Vinegar
2 Tbsp Low Sodium Soy Sauce
1 Medium Avocado, sliced
Instructions:
- On high heat, preheat skillet with sesame oil
- Add all veggies, saute for 1 minute
- Add 3 eggs into pan and scramble. Mix in all veggies with scrambled eggs
- Add rice to the skillet
- Add rice vinegar and soy sauce to the skillet, remove from heat
- Fry the remaining 3 eggs in a separate skillet, add to top of dished out fried rice. Add avocado slices
