Breakfast Fried Rice

Ingredients:

1 Tbsp Sesame Oil
1/2 Cup Diced Carrots
1/2 Cup Edamame
1/2 Cup Diced Zucchini
6 Eggs, Divided
2 Cups Cooked Brown Rice
2 Tbsp Rice Vinegar
2 Tbsp Low Sodium Soy Sauce
1 Medium Avocado, sliced

Instructions:

  1. On high heat, preheat skillet with sesame oil
  2. Add all veggies, saute for 1 minute
  3. Add 3 eggs into pan and scramble. Mix in all veggies with scrambled eggs
  4. Add rice to the skillet
  5. Add rice vinegar and soy sauce to the skillet, remove from heat
  6. Fry the remaining 3 eggs in a separate skillet, add to top of dished out fried rice. Add avocado slices
