Wild Rice Salad

Ingredients:

1 1/2 Cups Wild Rice
3 Tbsp Cider Vinegar
2 Tsp Dijon
1 Tbsp Agave
1 Garlic Clove, Minced
3 Tbsp Olive Oil
1 Carrot, Shredded
2 Cups Kale, Shredded
1/2 Cup Sliced Almonds
1/4 Cup Dried Cranberries
1 Can of Chicken

Instructions:

  1. Cook wild rice according to box
  2. In a small bowl, mix vinegar, Dijon, agave, garlic and olive oil. Season with salt and pepper.
  3. In a big bowl, add rice, carrots, kale, cranberries, almonds, and shredded chicken breast
  4. Add the dressing and combine until fully covered.
